Banana- wrapped Delicacies

There are merienda items in Albay that are relative because they are wrapped in banana leaves which are perennial to the region. A few of these snacks are balisungsong, suman, binutong and sinapot.

The cone-shaped treat known as balisungsong and the log-shaped one which is suman are both steamed- recipes. It is a mixture of either grated cassava or glutinous rice, grated coconut meat(lukaron)and brown sugar, cooked for an hour. This combination is wrapped in banana leaves that are heat treated. The process releases the natural oil that makes it pliant and fragrant.

Binutong on the other hand is a mix of glutinous rice, fresh coconut milk and salt. The mix is placed in the leaves heated over a flame, then formed into pouches, and are cooked for an hour.

A street snack called sinapot/ maruya is also popular. It is batter-dipped cardaba (saba) banana slices that are fried to golden crispness.

These delicacies are native in Albay, passed down through generations. Knowing these local meriendas is tantamount to knowing its heritage and its people.

Pighalo na kinudkod na kamoteng kahoy o kaya pulot na pigdagdag sa nakudkod na lukadon, asin pulang asukar an lulutuon sa sarong oras. An kombinasyon na ini, pigpapatos sa dinangdang na dahon ki batag. Ining proseso an nagluluwas kan natural na lana na nagapalumoy asin hamot sa dahon.

Mientrastanto, an binutong; pinaghalo na pulot, preskong gata dangan asin. An pinagsalak na mga sangkap, ilalaag sa dinangdang na minoldeng dahon asin lulutuon man sa laog ki sarong oras.

Popular man na pankalyeng mirindalan an pig aapod na sinapot/ maruya. Ini mga pinidasong saba na pigsasawsaw sa galapong bago iprito hanggang maging marigsip.

Ining mga pagkaon natural na sa Albay asin nag-agi na sa pirang henerasyon. An pagmidbid kaining mga lokal na merienda, siring man sa pagmidbid sa etnicidad asin mga namamanwahan.
